Bakers can choose from several ready-to-use crumbles in Pidy’s 2011 portfolio, including Speculoos, the Dutch spice coffee biscuit which generates that evocative scent of Christmas gingerbread. Sprinkled over cakes, desserts, mince tarts and table centrepieces, the Meringue version gives the appearance of pristine snow which glows among the tinsel and icing.

Pidy’s tart cases come in circular format or the more unusual triangular and square versions. So, why not fill these with mincemeat and top with Meringue Crumble for an almost instant unique mince pie? The recipe requires just the green (spinach) and the red (tomato) cones to make it Christmassy.
